Buffalo chicken wings with a blue cheese dip
Lip smacking buffalo chicken wings in a honey coated hot sauce, served with a creamy blue cheese dip, this is the nuts!
SERVES: 4 | PREP & COOK: 1 hr
Ingredients
1 tbsp garlic powder
1 tbsp paprika
1 tbsp plain flour
1.5kg chicken wings
Buffalo sauce
120ml hot sauce
50g salted butter
40g brown sugar
3 tbsp honey
1 tbsp white wine vinegar
Blue cheese sauce
40g salted butter
2 tbsp flour
100ml milk
100g blue cheese
100ml sour cream
Method
Preheat the oven to 200°c / gas mark 6.
Toss the chicken wings in the paprika, garlic powder and plain flour and leave in the fridge over night or at least 1 hour.
Add the buffalo sauce ingredients to a small pan and gently heat. Keep stirring until all the ingredients come together and resemble a smooth sauce.
Mix the hot sauce with the chicken wings until each wing is fully coated.
Place in the oven and cook for 45 minutes turning half way through cooking.
Meanwhile make the blue cheese dip. Gently heat the butter over a medium heat until melted. Wisk in the flour to make a roux. Gradually wisk in the milk until smooth. Add in the creme sour cream and blue cheese and keep over the heat until all the blue cheese has melted and the sauce is smooth and thick.
Set the blue cheese to one side or place in the fridge to cool while the chicken cooks.
Serve the chicken wings with the blue cheese dip, sprinkle with chives if you like and enjoy. (We added baked potatoes, homemade coleslaw and salad to ours to make a meal).
